Healing Candida and Cancer Naturally Through Ketogenic Diet, Cleansing and Detoxing

Boy oh boy, time just keeps flying! So what’s new with you? Here are a few things I’ve been doing.


I soaked some seeds for easier sprouting and got a start on my garden. I plan to have lots of juice worthy greens! I'm using seeds I had leftover from the ones I bought last year from Botanical Interests (I'm affiliated). I love their selection of organic and heirloom seeds, and their prices are lower than most others I have seen!


I noticed that my raspberry bushes were growing! I just put them in last fall, so I wasn't sure how they would do, but I'm excited to see green on them! They are an overbearing variety, so I'm looking forward to having my own fresh berries throughout the summer. I also planted blueberry bushes and am still waiting to see what they will do. I bought both sets at an Amish Mud Sale, what fun! If you've never been to one, you must go!


I cut the underwires out of my bras! I’ve known for quite some time that underwires were not healthy, but what finally got me off the underwire bandwagon was learning how they can inhibit lymph circulation. Since I know I have cancer in my lymph system, I decided it was time to get rid of those underwires! I simply used my seamripper to make an opening at one end, pushed the tip of the wire through and pulled it out. At least I don’t have to buy all new bras!A Positive Result for Cancer


I mentioned in my last WIA post that I was sending a sample out to test for cancer. Although I have been quite certain that I have cancer, I faced a lot of disbelief. I honestly have had no intentions of seeing a doctor since I plan to take the natural route. When I learned that I could mail a sample to a lab, I decided to go for it to have credibility with my peers as well as for my blog and future book. Hair removal became something normal!


The test was for HCG, Human Chorionic Gonadotropin, a hormone found in pregnant women and cancer patients. I tested positive (52.2) for cancer (and no, I am not pregnant).My Reaction


Now, this may seem ludicrous, but I was actually delighted with my positive result! My mind said “Yes, I’m not imagining this!”, “See, all you naysayers? I told you, but you didn’t believe me!” “Now here’s my proof!”


Now that I’ve had a time to mull it over, I must admit to being a bit scared. Before knowing for certain, I didn’t dwell on it much, I felt that everything I was doing was improving my condition, so I didn’t worry. But now I feel like I need to focus more on my healing. Working full time makes it difficult for me to do all that I really should be doing. I’m actually considering some options that may allow me to have some time off from work.


I’m not sure yet what the outcome will be, but I what I would like to see happen is having the next six months off while still getting some income. If I want to go for disability, I would need to be diagnosed by a doctor and have a doctor complete the paperwork. I really don’t want to go through whatever tests and expense it would take to have a diagnosis. But there may be alternatives, such as a layoff.I Should…


One of the things I should be doing is getting an hour of sun each day, which is very difficult to do when I’m working. I can get sun on the weekends, as long as we have good weather. Last weekend was great, today, not so good.


I also should be gardening for plenty of fresh produce. I did plant a few things this past weekend. But, keeping up with a garden on top of everything else I need to do may prove difficult, and I don’t plan to worry or stress myself out over having a garden. So, if I don’t have the time, it just won’t happen.


I should be doing 2 to 3 coffee enemas per day, but I only have time for 1.


I should be juicing more. I had backed off from juicing due to not being able to juice carrots or apples. There’s too many carbs in them for me right now. The thought of plain green juices didn’t appeal to me, but today I made a very tasty green juice (see Beverages below).


I should be exercising more. I do walk the dog most days, but I haven’t been able to squeeze in more. I would really love to be doing yoga each day.


And probably the most important thing I need to be doing is having joy in my life. Quite honestly, the only joy I get from my job are the friendships I have with my co-workers and my paycheck. Most of the job isn’t bad, but it’s not my passion. Right now my passion is health and healing naturally from Candida and cancer, which I hope to be able to help others with the same struggles. That is why I am doing this blog. If I had time off from work I could also focus on really getting my blog off the ground and living a life that brings me joy!

Yesterday I did more research on colon cancer. Dr. Mercola recommends:Meats should not be cooked at high temperatures, so no bbq, roasting, browning, frying, etc. Looks like I need to start making soups and poaching my chicken or salmon.No processed meats. I admit, since going keto I went all the way and I’ve been indulging in some uncured organic bacon, it’s very tasty in my broccoli salad, but time to give it up again.No beef. That means no more taco salad.No melted cheese. I do have sources for raw organic cheese, I just won’t be able to melt them anymore.Snacks/Desserts

It was quite good, very mild tasting. I think some lemon would be good in this, maybe a little gingerroot too. I didn’t add any today since I was also going to take my weekly detox bath with ginger lemon detox tea.

Have you heard of doing coffee enemas as a natural remedy for cancer? Or is this news to you? “What???!!!”  “Coffee enemas???!!!” “Lady, you’re crazy!!!!” That’s the reaction I get my from kids :-). “Mom, coffee is for drinking, not for what you’re doing”they will say. If I try to expound on the ritual I am immediately shushed, the subject is off limits for conversation, lol!


But seriously, why should you do coffee enemas? Because they draw toxins out of your liver. Our liver detoxifies our body but it can become overloaded when there are more toxins than the liver can keep up with. This is especially true when healing naturally from cancer because many toxins are being released into the body as the cancer is being eliminated.


If you aren’t familiar with coffee enemas, you might be thinking I am suggesting you brew some coffee in the usual way or perhaps go pick up some Starbucks or your favorite take out and use it in an enema.This is slightly different because you’re going to simmer the coffee in a pot for 15 minutes. This creates a stronger brew. Also, the lighter roast coffees have more caffeine, so use an organic breakfast blend rather than a dark roast. Another option is a very light roast designed specifically for coffee enemas. S.A. Wilson’s is a good place to get coffee specifically for enemas (I’m not affiliated). The price is comparable to other organic coffees.


If you are concerned about the caffeine, most people find that it does not affect them the same way that drinking caffeine does. The caffeine stays contained in the colon and filters the liver.


I myself had been caffeine free for many years. I’m sure I would have been bouncing off the walls if I drank that coffee, but I don’t notice any of the usual caffeine side effects after doing a coffee enema. I can do a coffee enema in the evening and have no trouble sleeping.How to do a Coffee Enema


NOTE: The coffee enema should be done after having a bowel movement. If you have not had a bowel movement, do a  plain warm water enema (2 quarts) before the coffee enema.  Since my bowels are not moving well, I almost always have to do a water enema before doing the coffee enema. You don’t have to retain the plain water enema, but you should repeat it if you don’t get a good bowel movement. I also spend a few minutes massaging my gut to help loosen debris in the intestines.

Place 2 cups of FILTERED water (I use reverse osmosis) and 2-4 tablespoons  ground ORGANIC coffee (start with 2, then work up to 3 or 4) in a saucepan.


I use stainless steel. I do not recommend any cookware with nonstick coating.

Store your coffee in the freezer to keep it fresh.

Do not use chlorinated water! If chlorinated water is all you can get, add some powdered Vitamin C to the water to remove chlorination (1/4 tsp would be plenty).

Bring the coffee and water to a boil, then simmer for 15 minutes.

Allow the coffee to cool 15 minutes. This is a good time to do a plain water enema, if needed.

Add 2 more cups of filtered water to the coffee. You will have 1 quart for the coffee enema.


Check the temperature, you want it to be warm, but not hot. Sometimes I reheat it a little if it’s not warm enough, or I add more water if it needs to cool down more.

Optional: add probiotics to the coffee. I like to open two capsules and sprinkle the probiotics over the top of the coffee.

Pour into an enema bag (remove air or you will have “gas”) or bucket. I prefer the bucket because it easier to clean.


You could strain the coffee to keep any grounds from getting in, but I just pour carefully. Most of the grounds will remain in the bottom of the pan.

Position the bag or bucket 2-3 feet above the floor.


This helps to slow the flow into the body, which can be uncomfortable if it is too fast. When I used the bag I had no other option than to hang it higher on the bar. Just use your clamp to control the flow.

When using a bucket, I prop the end of it up on a folded washcloth to get more of the liquid out of the bucket.

Lay on a towel over a plastic sheet in case of leaks. I’m a small enough person that I just lay my towel down in the bathtub.

Lubricate the enema tip and your bottom with a little coconut oil.

The Gerson institute recommends you take the enema lying on your right side, but I don’t think it is critical to the process. Use whatever position works best for you, left side, right side, alternating sides, or on your knees.

Try to hold the coffee inside for 15 minutes (work up to 20 minutes or more). This can be very difficult at first, especially if you have a lot of debris built up in the intestines. Don’t worry if you can’t hold it in that long, as you continue to do them you will be able to go for longer periods of time.

This whole process usually takes me at least an hour to complete.

You may notice that you feel pain in certain areas of your body (mine were the liver, followed by the lymph nodes in my lower back, upper chest, neck, and armpit). Keep doing the coffee enemas! They will draw out the cancer that is causing pain.

Do this preferably 1 to 3 times per day. Most days I only have time for 1.
Caution: Don’t do a lot of straining to empty your bowels, 10 minutes max on the toilet. Sometimes you may have liquid left in the intestines. Don’t worry, the body will absorb it. If you do too much straining you will get hemorrhoids, not fun!

Plan on doing the daily coffee enemas for 1 ½ to 3 years.

The Gerson Institute also recommends that you have two green juices per enema. I haven’t kept up with this, I know I should. It will be easier for me now that garden season is here and I will have fresh greens for juicing.

                                Spread coconut out on large baking sheet.

                                Toast for 15 to 25 minutes, stirring occasionally. Keep an eye on the coconut as it begins to toast, it will turn quickly and you don't want it to burn!

                                Pour toasted coconut into food processor and add 2-3 full droppers of liquid stevia. Process until it becomes liquid. Taste for sweetness.

                                Place 36 mini muffin paper cup liners into mini muffin pans.           
                                                            

                6.
                                                                      
                                Using a 1 teaspoon measuring spoon, place 1 teaspoon of the toasted coconut butter into each mini muffin cup.

                                Place in fridge for 10 to 15 minutes to allow toasted coconut butter to set. The remaining coconut butter can be set aside, but if it cools completely it will harden. If you think you might be awhile, it would be a good idea to pour the remaining toasted coconut butter into a small saucepan, then it can be gently warmed to remelt it.

                                Place 1 teaspoon sunbutter in each cup. Spread the sunbutter out with a spoon (or whatever works best for you).

                                Cover each cup with another teaspoon of toasted coconut butter. If you have a little extra left over, distribute it among the cups.

                                Chill until set.

Rule of thumb: 2 cups coconut per dozen cups. So if you only want to make 24 cups, use 4 cups coconut.


I buy my coconut in bulk from my co-op. It’s so much more cost effective than the smaller packages, especially since I use so much of it. There’s also less waste in plastic bags going to the landfill. I store it in 5 gallon buckets that I get for free from the bakery section of my grocery store. Just ask, most stores will gladly give them to you. A 25 pound bag will fill two 5 gallon buckets.

How was your weekend? It was beautiful here! We had an 80 degree day today. I’m so happy I got to get outside and soak up some sun! Yet another reason to love recipes that are quick and easy to make! I took Bao for long walks to the dog park and and he got to run off his energy and play with other dogs. I’ve got all my windows open letting lots of fresh ionized air into my home, plus I hung laundry out on the line. There’s nothing like the fresh smell of laundry from outside. Do you agree?


Here’s an alternative to my Homemade Hazelnut Butter. Although delicious, hazelnuts can be pricey. Raw sunflower seeds are half the price of hazelnuts, making them much more cost effective. Or if you just need a recipe that is nut free, it’s a great tasting alternative!


Homemade Sunbutter is just as easy to make as hazelnut butter. The flavor is different, but just as delicious! I like to eat sunbutter with slices of Granny Smith apple or celery sticks. I also use it in my Toasted Coconut Sunbutter Cups, you’ve got to try them!Benefits of Sunflower Seeds


A 1 oz. serving of sunflower seeds contains 165 calories, 3.1 g of fiber, a whopping 5.48 g of protein, vitamins A, B1, B2, B3, B6 and E. The seeds also pack in a number of minerals, including calcium, copper, iron, magnesium, manganese, phosphorus, potassium, selenium, sodium and zinc.


Sunflower seeds contain heart-healthy monounsaturated fat. These weeks seem to be flying by too quickly! I had a very busy weekend, got some things done around the house and did some shopping. I spent two hours in a local thrift store! I love looking through everything, trying things on and thinking about which items I should buy. I must say I’m very pleased with my purchases! I apologize for the angle, I was standing on my bed to try to get them all in one shot, lol!


I also shopped at a door buster sale at my local mall and bought two adorable outfits for my grandson for Easter. I love the Elmo hat! And Daddy will appreciate the “First Mate” T, since Daddy dreams of sailing.


I made some toasted coconut sunbutter cups, a yummy stevia sweetened “candy” treat. I’m planning to get that and more recipes posted very soon!


I’ve also been busy working towards positive visualization via Joe Vitale.


It’s a very interesting subject, imo. And I find that it really works! A number of positive events transpired this past week for me.

Over 6 months ago I had an issue with someone repeatedly calling my phone. Although I had blocked them, I was still being charged a minute every time they called, which in one months time added up to over an hour. I had complained to my service provider, but had not heard anything back from them. Then out of the blue, I got a text message from them saying they had credited my account with the lost minutes!

I was also going to have to appear in the court trial of above mentioned person, unless they plead guilty. I began to visualize calling the DA’s office and being told they had plead guilty. That very morning they did plead guilty! I am thankful!

I also discovered TLC Spine through Tamara St. John of Alternative Health Solutions for spinal surgery. I now have an alternative method for testing for cancer. So I purchased the items I’ll need to prepare my sample and will get that sent out this week. I’m quite certain about my cancer, but this would be good to have as evidence, especially for all the “nay sayers”, as well as having a baseline to compare to when my cancer is healed.


As you know, I’m transitioning into a ketogenic diet, which is a large part of the reason I have resumed meat eating after being a vegetarian for 10 years. I’ve been allowing myself a serving of low sugar fruit each day in order to use up what I had purchased on a prior grocery shopping trip.


I have been testing my urine with keto sticks and am consistently measuring between 5(0.5) and 15(1.5), with one reading of 40(4.0) ketones. I can also tell that I am losing some weight, though I haven’t weighed myself (I needed to get new batteries for my digital scale).


So, here’s what I ate last week.

I am in the process of switching gears…again. It’s what I do. I seem to be in a constant state of change. I no sooner get whatever stage I am in figured out, only to have to figure out a whole new stage! But hopefully I am moving forward each time and not backward.


To some it may not seem that switching from a vegetarian diet to an omnivorous diet is a step forward, but I do believe that no one diet is perfect for all people. We all have different needs and different health issues, so it is only natural that we would have different dietary needs.


For myself, I have needed to follow a low carb diet, which I did quite successfully as a vegetarian. Except that I still managed to gain weight. I blame that on the carbs in my diet that have been feeding my Candida. Although I was keeping the carbs low enough that I wasn’t having any serious issues, the issues were still there, hiding below the surface. So I came to the conclusion that I needed to go very low carb, even ketogenic. This would enable me to lose those extra pounds, as well as starve off my Candida and cancer. Ketogenic diets are an effective natural remedy for cancer.What’s New?


Last week I purchased a new enema bucket from Amazon.com which I am so thrilled to have! I had been using an enema bag, which I disliked because I couldn’t really clean the inside. It bothered me a lot thinking about what might be growing in there, yuck! I’ll share in another post soon how I am liver cleansing with coffee enemas (sounds exciting, eh?)


I also stumbled upon Joe Vitale. Have you heard of him? He helps people realize their dreams. He was in a movie titled “The Secret” which describes how to attract money and success in your life. He’s also written several books. It’s very, very interesting! I am a believer that we are what we think we are. Unfortunately, I had been attracting negative energy in my life. I am now making a very conscious effort to turn my dreams into reality.


Of course one of those dreams is attaining the perfect body for me. Part of what is involved in reaching that goal is visualizing how I will reach that goal. I’ve started some posters with magazine clippings that I put up around my home. I have a poster in the kitchen showing the types of foods I will eat. They will be healthy fats, some protein, and low carb vegetables. No longer will I focus on desserts, healthy or not. I really need to minimize desserts in my life. I will allow myself a square of very dark chocolate now and then, or coconut, nut, seed and/or avocado treats, but for the most part, these will not be a staple in my diet any longer.


Part of the reason for this is that I have the tendency to overdue. Likely the carbs in my healthy desserts were making my body scream, “More! More! More!”. Little did I realize that coconut flour is not as low carb as we have been led to believe. It is only slightly lower than regular flour. Of course, you don’t need to use as much of it, but it does explain why I would devour a whole stevia  sweetened cake in less than two days all by myself. Carob powder also contains carbs, although relatively low, but not low enough if I am going to follow a ketogenic diet, I will need to cut out my carob desserts as well.


But I’m not going to miss them because my low carb diet with the proper amounts of healthy fats, protein and nutritious low carb veggies is going to satisfy my body. The pounds will begin to melt away. The toxins that are stored in my fat cells will be released and I will continue to cleanse and detox. I will reach the perfect weight for my body, I will feel good, I will be am happy with my body image and how my clothes fit me.

Have you ever done a colon cleanse? What were your results? I had seen pictures where the sludge lining the intestines comes out in disgustingly large, long pieces. I had never had that experience…until I used this colon cleansing method. It really works! And it is so much more cost effective than buying expensive supplements that may or may not work.




When I first researched this method, one source recommended following the routine for 2-3 weeks, another for 3 months. I recently read from a third source that recommended 10 months. Wow! I know that even 3 months seems like a very long time! The clay will draw toxins out of the body. The fiber will cling to the intestinal wall “scrubbing” the bad bacteria from your gut. Capryllic acid is an anti-fungal that will work in conjunction with the clay and fiber by “punching holes” in the fungus in your intestines.


This should be taken on an empty stomach. Take it first thing in the morning or at least 2 hours after a meal. Don’t eat for an hour after taking the mixture.




I’ve read that you will get better results using liquid clay and liquid capryllic acid. But, these are more expensive than the powdered and capsule varieties. Since I am doing this on a budget, I am not using the liquid forms, but I am still getting very good results.How do I know? The evidence can clearly be seen in what I am eliminating. When I started out taking the recommended 1 tablespoon each of clay and fiber in one cup of water, I had a lot of stomach gurgling, more constipation, and eventually a pretty severe die off reaction. I then stopped taking it for a few weeks.


I later read on “Whole New Mom” that she considered stomach gurgling a sign that the war on bad bacteria was working, so I decided to get back on the bentonite clay and psyllium husk fiber routine. But this time I started at 1 teaspoon each of clay and fiber and gradually worked my way back up to a tablespoon of each. Much better!How it’s Done


I like to prepare the mixture in a pint or quart sized mason jar. It easier to mix without using utensils. You should never use metal with clay. It’s ok to use plastic with dry powdered clay, but not with hydrated clay. Wooden utensils are an acceptable option, but no utensils are best.


When using powdered clay, it’s best to allow the clay to soak in water for 6 to 12 hours. I prepare my morning dose before going to bed and my evening dose after I have taken the morning dose.

Pour 1 cup filtered water into a pint or quart sized jar.  Sprinkle 1 to 3 teaspoons of bentonite or green clay over the top of the water.  The amounts will be 1 tablespoon, but start with 1 tsp and work your way up to minimize detox reactions.

Allow the clay to set in the water for 6 to 12 hours.

Add 1 teaspoon vitamin C powder and (8) drops of stevia in this mixture for flavor (optional). Shake to mix.

Get 2-3 capryllic acid capsules ready. You’ll want to take a total of 6 capsules per day, but you can work your way up to this.

Add 1 to 3 teaspoons psyllium husk fiber to your clay water in the mason jar. Start with 1 teaspoon and work your way up to 3 teaspoons. Put the lid on the jar quickly, shake it up and drink it down as quickly as you can taking the capryllic acid capsules as you drink. It’s important to do this quickly because the mixture will become very thick the longer the psyllium has to absorb water.Add a little more filtered water to the jar after drinking, shake it up and drink what’s left of the mixture. Clean the jar and lid with water, then get your next dose of clay water ready.

Do not use metal spoons with the clay!

I’m behind on my posts! Two weekends ago I went out of town to visit my grandson for his first birthday! Isn’t he the cutest little boy ever (besides your own, of course!)?





I don’t have words just how wonderful it was to get to spend quality and quantity time with him. It did my heart good. Sure do wish we didn’t live so far apart!


I also started Spring Cleaning (colon cleansing). Since I had had a recent set back when I tried to move to Stage 2 after being on Stage 1 for a full year (and put pounds back on), I decided it would be a good idea to colon cleanse again. I’ll have another post in the near future about how I am doing that. I did skip a few meals and used my colon cleanse as a meal substitute.So here’s what I ate the last two weeks:Breakfasts

How am I doing? As always, I think there is room for improvement. It’s not easy working full time, blogging, taking care of house and home (and puppy), and cooking almost everything from scratch. But I’m doing the best I can 


I’ve come to the conclusion that I need to follow a ketogenic diet. My diet has been low carb, but not low enough. I’ve read that ketogenic diets are effective in healing cancer naturally. I can’t follow the Gerson diet because I also have Candida, and too many carbs cause my Candida to flare up. I’ve been a vegetarian since 2004. For a few of those years I was also vegan but added free range organic eggs and later some organic dairy back into my diet.I’ve been considering the move to add fish (and now free range organic chicken) for quite awhile. In fact, last year I did order a salad with smoked salmon at a restaurant. The smoked salmon wasn’t very good though. I’ve had good salmon, and I know I liked it. Many months ago I also created a Pinterest board titled “Unvegetarian”.But this isn’t about whether or not I like fish or chicken. It’s about how I define myself. For the last 10 years I have defined myself as a vegetarian. I liked being a vegetarian for all the reasons one becomes vegetarian. It’s healthy (providing you’re not living off of cake, ice cream, potato chips and the like), it’s better for the environment and more humane for animals. But, vegetarian and vegan diets tend to be high in carbohydrates which likely contributed to my Candida and cancer.


Since I’ve been struggling with Candida and cancer for over a year now, I’ve lost whole food groups from my diet. I am not able to tolerate any grains, most beans, and starchy vegetables. I can only have 1 or 2 servings of low sugar fruits per day. Of course, I can have all the low carb veggies I like, but veggies themselves are not filling enough for me.


That leaves me with eggs, tofu, plain yogurt, nuts and seeds. All of which are ok, but should be used in moderation. Because my options are limited, I find that eat too much of eggs, nuts and tofu. Occasionally I have some tempeh, but its not something I like to have on a regular basis. Since I am stuck with this diet due to my health issues, I think I will be happier if I have more protein choices. Besides, most Candida diets recommend including salmon.


My co-op occasionally orders through Wild For Salmon, so when I saw the offer posted, I went ahead and ordered. I’ll be able to pick up my salmon the second week in April. It was a bit pricey, so I won’t be indulging in salmon very often, but at least I will have another option for those days when I’m tired of tofu, eggs, yogurt, nuts and seeds. And yesterday I picked up an organic free range chicken at the grocery store. Yes, there is a chicken in my fridge!Your Turn


What are your thoughts? I imagine the vegetarians and vegans will all be screaming “Noooo!!!! Don’t do it!!!!!”


The meat eaters will likely say, “It’s about time!” and “That’s why you were sick, you didn’t eat meat” and “How long until you eat beef?”


If you’re like me, you understand that it’s a personal choice. I’ve done a lot research and contemplation. It’s not the easiest of decisions to make. One does not go from being a vegetarian for 10 years to an omnivore without much soul searching. But I do think it will be to my benefit to consume wild caught salmon, free range organic chicken/turkey, and maybe someday grass fed organic beef.


I’ve already been told that protein is a no-no when you have cancer, but I’ve also read that ketogenic diets are effective in healing naturally from cancer. I’m not able to follow the Gerson diet because it is too high in sugars and would exacerbate my Candida. I believe that everyone is different and what works well for one person my not work well for another. Each person needs to decide for themselves what diet will be best for their health. At this point in time, I believe this might be what my body needs. I’ll keep you posted. Who knows, I may not stick with it, but then again, I may notice improvements in overall health.

I am so in love with Tofu Chic’n Nuggets, I eat them most every week (too much, I know)! So tasty! I really enjoy them with broccoli (my favorite vegetable)! If you can have sweet potatoes, they make a very nice addition to the meal. But I think they would go well with whatever vegetable you choose. They are also a tasty addition to salads. I’ll even eat them cold straight out of the fridge!A Word on Tofu
I know that most Anti Candida Diets discourage the use of soy products but it does not seem to be strictly prohibited. I understand that tofu is a processed food, but it is also a very good source of protein. As a vegetarian, I like having tofu as a protein option in my diet. I think the greatest problem with soy products (barring any soy allergies) are the risk of GMO’s. Therefor I only use organic. Yes, it is possible I’m still getting some GMO’s even if the tofu is organic, but that can be true for almost any food item these days. I do the best that I can and consuming tofu does not appear to be an issue for me. Moderation should be exercised when using tofu to reduce any chances of developing a soy allergy.A Word on Nutritional Yeast
Most Anti Candida Diets also recommend avoiding nutritional yeast. However, my understanding is that the yeast in this product is not live and therefore is not considered to be a problem like other types of yeast. I like its flavor and enjoy using it in my recipes. It also does not appear to cause any issues for me. Listen to your body, if you believe it is causing issues, then avoid it.The Recipe
I modified this recipe at The Vedge because it called for frying the nuggets in oil, which I’m trying to avoid. They were also a bit too spicy for me. The result is crispy oven baked nuggets that are simply delicious!


I like to make a double batch, which gives me 4 large servings (I like to have the leftovers), but you could certainly cut the recipe in half if you don’t want a whole baking sheet full of them.


I would classify this recipe as Stage 1 since you could have garbanzo beans on Stage 1. My Candida was so severe that I wasn’t able to tolerate any beans in the early stage of my diet. Lately I have been enjoying these while still not technically on Stage 2 yet.Tofu Chic’n NuggetsPrint recipeIngredients2 tofu, firm or extra firm (14 oz tubs)2/3 cups garbanzo bean flour1/3 cup nutritional yeast (granulated)2 teaspoons Herbamare (or your favorite seasoned salt)1 teaspoon dry mustard1/2 teaspoon black pepper2 tablespoons olive oil (or melted coconut oil or butter)1/2 cup filtered water (plus 1 tablespoon)
        Directions

                                Drain and press tofu for 20 minutes to remove excess water.

                                Preheat oven to 350 degrees F.

                                For the coating, combine dry ingredients in a large bowl. Add wet ingredients and whisk until batter is smooth. Batter will be thick but will thin out some when you add the tofu.

                                Cut tofu into bite sized pieces or tear into chunks. (I like to cut the thickness of the blocks in half, then lay them flat and cut into quarters lengthwise and widthwise. This gives me 32 pieces per block.)

                                Add tofu pieces to batter.

                                Using a rubber spatula, gently fold the tofu pieces with the batter until the batter is evenly distributed. Each piece should have some coating on it.

                                Drop tofu pieces onto a parchment paper lined baking sheet. Don’t skip the parchment paper, they will stick! Try to spread them out a little so they aren’t all in clumps. I usually have a little batter left over that I try to distribute to any pieces that look like they could use more coating.

                                Bake at 350 for 30 to 35 minutes.Note      

I use sprouted tofu when I can get it (usually through my co-op).


For a meatier textured tofu, freeze the tofu and then thaw.


The refrigerated leftovers tend to loose their crispiness, but if you reheat them in the oven they crisp back up.
